If you are a shrimp lover, you've almost certainly had shrimp scampi. But if you were at Vincent's this past weekend, you were one of the lucky ones who had the chance to try a sublime version of this already-delicious dish.
You know we love Vincent's. They were one of the first restaurants to take a chance on us and they regularly serve our fresh pasta.
But they're never content to order the same fresh pasta every week. Instead, they mix it up quite a bit. Some weeks it's spinach ziti, some it's cilantro linguine, others it's beet penne. And they always work a recipe around the flavor and shape of our pasta and create a magnificent dish every time.
This past weekend was no exception. They paired our saffron pappardelle with shrimp, red peppers, and arugula and served it all in a mouth-watering lemon butter white wine sauce.
We don't like to say we have favorite pastas, or ones we love more than others - you'd never say that about your kids and we'd never say it about our pastas. But there are some times that we feel a little extra special something - and this saffron pappardelle at Vincent's might be one of those times. (Don't tell the other pastas!)
This dinner wasn't just a medley of complimentary tastes. It was also a beautiful compilation of colors. The slightly orange-hued yellow of the pappardelle is echoed in the shrimp tails, and the reds of the shrimp are picked up by the vibrant red of the peppers, and the green of the arugula is the perfect opposite. (We aren't professional painters but red and green are opposite each other on a color wheel and always look good together!)
