Nothing says summer is coming like a fresh and bright pasta salad. Making that pasta salad with our fresh pasta takes it to a whole new level.
Start with diced cherry or grape tomatoes, basil chiffonade, some minced garlic, and diced mozzarella cheese. Drizzle with olive oil (and maybe a dash of balsamic vinegar) and sprinkle with salt and pepper. And be sure to use a small shape pasta, like our orecchiette, so that the other ingredients can get "trapped" inside the pasta. Chill before serving.
If you make this first thing in the morning, you won't even have to fire up the oven during the hottest hours of the day.
Given how extensive our local food scene is, you can probably make this an entirely Vero Beach local meal!
