Another shout-out today to Vincent's Vero. They've been in business here in Vero longer than I've been alive (!) and they sure have learned a thing or two about how to make pasta shine. Here's another version of my beet penne - this time paired with pancetta (an Italian bacon) and peas and topped with just a sprinkle of cheese.
It may never get freezing cold here in Vero, but who says we don't all deserve some comfort food now and again? Now if it only came with a cabin and a roaring fire . . . .
